Amberjack is a fish characterized by silvery-blue color, with longitudinal line gold, the swallowtail and the two dorsal fins of different lengths. Its meat, soft, tasty and delicate at the same time, is well suited to baking.

We propose recipe of the amberjack with potatoes, which can also serve as a main dish.

Ingredients for 2-3 people

2 lb. (about1 kg) amberjack (Yellowtail amberjack)

4 cloves of garlic

1 lb 12 oz. (800g) potato already peeled

Spices: sage, rosemary, bay leaves, oregano

Parsley

Salt and pepper (to taste)

Extra virgin olive oil (to taste)

How to cook:


* Clean the amberjack, Remove the innards (If this is the whole fish), wash quickly under running water and dry it, then fill the belly with 2 cloves of garlic, various spices listed in the ingredients and parsley after washing it, and a pinch of salt.

* Peel the potatoes, wash, dry and cut into cubes.

* Put the fish in the oven tray along with potatoes, previously diced.

* Sprinkle over the potatoes and amberjack various spices, listed in the ingredients, then add 2 cloves of garlic ( cut each slice in half) and a few leaves of parsley, salt and pepper and sprinkle with olive oil.

* Introduce the pan in the oven on the middle floor and cook at 356 F (180 C) for 45 minutes.

* Bring to the table amberjack (remove the spices from the abdomen of the fish before serving) with potatoes.
