Cod in tomato sauce
It's a dish with tasty flavor but not too strong, perfect if accompanied by a nice warm polenta.
Ingredients for 4-5 people:
1 lb. 12 oz. (800 g) Salt cod soaked
A bunch of spring onions
1 can of tomatoes 28 oz. (800 g)
4-5 tablespoons extra virgin olive oil
17 fl oz. oil for frying (about 1/2 liter)
0,5 cup flour,
Salt (to taste)
How to cook
Gently rinse the cod in cold water (after removing any skin) and dry with paper towels
Cut into pieces not too large (more or less like the sticks of a famous brand), you will get a fried crispy golden.
Finely chop the onions and let them brown with 4-5 tablespoons of olive oil in a pan.
When the onion becomes golden yellow, add the chopped tomatoes, stir and leave on low heat.
Roll the pieces of cod in flour, deep fry in hot oil and put on absorbent paper.
Put the pieces of fish in tomato sauce.
Cook over low heat for about ten minutes before serving.
