Gildas - skewer with pepper, anchovy and olives
Gildas means 'lollipop' in Spanish, the gildas classic is a simple skewer with a pepper, an anchovy and olives. The combination of good anchovies pink with small, smooth and crunchy peppers and fresh olives pitted turns into a delicious morsel.
4 oz. (115 g) fine marinated anchovy fillets in olive oil
11 oz. (about 300 g) large peppers, cut into pieces if necessary
8 oz. (225g) pitted olives
Take a skewer; impale anchovies, 2 or 3 chilies, 1 - 2 olives. Vary the ingredients until they fill skewer.
Gildas stacked on a serving dish and serve immediately.
