Hummus - a good appetizer before a meal


A hummus served with fresh or toasted pitta, usually, it is great as a snack or as an aperitif. The tahini is an important ingredient in hummus recipe and cannot be replaced, if you can help it. The hummus is one of the known Middle Eastern sauces prepared.



1 box (1 lb. or 450 g), chickpea

1 1/2 tablespoon tahini,

4 tablespoons lemon juice (according to taste)

2 fl oz. (60 ml) vegetable broth or water

2 cloves garlic, minced

1-2 tablespoons olive oil,

1/2 teaspoon salt (according to taste)

For garnish: Fresh parsley chopped,


Drain through a sieve and set aside the chickpeas. Put the chickpeas, water or broth, lemon juice, tahini, garlic and salt in a blender or food processor. Add 60 ml of water stored chickpeas. Blend for 3-5 minutes on low speed until the mixture becomes smooth and soft.

Pour into a bowl and make a shallow hollow in the center and pour in the oil hummus. Garnish with the chopped parsley. Serve immediately with warm or toasted pitta.

If you prefer, cover and refrigerate until use, and add olive oil and parsley just before serving.
