Moroccan Tagine


Recipe for Moroccan Tagine (This recipe is for 4 people)



1,3lb (~ 600 g) lamb into large cubes

1 yellow onion

1 Tbsp. oil

1/2 tbsp. cumin

1/2 g saffron

1/2 tsp. salt

2 pinches. white pepper

2 tsp. brown Sugar

6 cups water

12 dried apricots

1 Tbsp. potato

1 lemon, grated peel and juice


Cut the meat into approx. 4 cm cubes. Peel and dice the onion. Heat oil in a pan and brown the meat and onion. Season with salt and pepper. Add the cumin, saffron and brown sugar. Pour water over the meat and simmer with the lid on about. 1 hour. Add the apricots, lemon zest and juice, and simmer for another 15 minutes. Thicken potato flour mix with a little water.

Season to taste and add if necessary more spice. Server couscous or tabbouleh(Levantine Arab salad usually made of , tomatoes, finely chopped parsley, onion, mint, garlic, and seasoned with olive oil, lemon juice and salt).
