Paella with vegetables




Ingredients for 4 people:

0,5 cup (100g) beans

4 artichokes

7 oz. (200g) cauliflower, cut into florets

1 tomato

1 red bell pepper

1/2 leek

1 courgette

1 carrot

3 cloves of garlic

1 teaspoon paprika

2 cups of chicken broth

12,5 oz. (350g) of rice

7 tablespoons (100 ml) extra virgin olive oil

How to cook:

Soak the beans for 10 - 14 hours. Put the beans in cold water and simmer for 60 minutes.

Cut the artichokes into pieces. Peel and chop the garlic.

Chop the tomatoes. If desired, remove the seeds. Cut all vegetables into pieces.

Heat the oil in a frying pan. Put peppers, tomatoes, artichokes, cauliflower, zucchini, carrots, onions and fry in oil.

Add the red pepper, stir occasionally for about 4 minutes.

Once the vegetables have browned, add the rice and stir until the grains will transparent.

All put in a pot of beans, add the chicken broth and bring to a boil.

Cook paella with vegetables 20 minutes, stirring all the time.

Place the paella in the oven for 8 minutes

Serve hot.

Use seasonal vegetables.
