Pasta with fresh tomatoes


This is very simple pasta with fresh tomatoes, to be prepared when it's too hot to traffic in the kitchen. The spaghetti with this sauce is the perfect dish for those who do not want to give up pasta even on vacation.



8 large ripe tomatoes, peeled and seeded

1 clove garlic, minced or crushed

2 tablespoons finely chopped parsley

9 leaves fresh basil cut into small pieces, salt and black pepper

8 tablespoons extra virgin olive oil or more

1lb (454 g) spaghetti


Chop the tomatoes and place in a bowl with the garlic, parsley, basil, salt and pepper. Pour the oil and let stand, with the lid, for at least 1 hour, preferably not in the refrigerator.

Take a large pot of salted water; add the spaghetti and stir, making sure that they are well immersed in water. Continue to cook until the noodles are will be ready.

Drain water and put noodles in the pot. Pour the sauce, stir, add more oil if necessary and serve immediately in a serving dish.
