Pork loin with cherry tomatoes
For 2 people
1 lb. 5 oz. (600 g) cherry tomatoes
8 black olives pitted
8 basil leaves and oregano
4 tablespoons extra virgin olive oil
2 cloves garlic
1 lb. 5oz (300g) pork loin
How to cook
Wash the tomatoes and cut
Olives cut into four parts in the longitudinal direction.
Put the tomatoes and olives in a colander, season with a pinch of salt, basil leaves and oregano, let lose a little 'serum.
Put the oil in a frying pan the garlic cloves peeled and brown.
Merge the slices of pork loin and brown them on both sides, then cook them for 10 minutes.
Add a pinch of salt, grated pepper, tomatoes and fry for a couple of minutes, then serve with all the cooking.
