Soup of Farro and beans


Mediterranean diet recipe.


Farro is a food product consisting of whole grains of certain wheat. Farro is often used to make risotto in the Mediterranean dishes.


5 tablespoons extra virgin olive oil

1 celery

1 carrot

2 onions

5 oz. (145 g) Farro ( can replace barley grains)

4 sage leaves

1 tbsp. tomato paste

7 oz. (200 g) dried white beans

Black pepper



Dunk the dried white beans in cold salted water for at least 12 hours and cook in the same water, add onion and sage leaves.

Once cooked, divide the beans in half and finely grind one part. Put all the beans in the broth.

While cooking beans fry in a pan onion, celery and carrot, and tomato paste with olive oil. Put vegetables in broth with beans. Add the Farro, salt and pepper and cook for 1 hour.

Ladle into bowls and serve in the form of heat, adding a sage leaf.
