Spaghetti alla Bolognese
Spaghetti alla Bolognese is very well known outside of Italy and especially outside Bologna.
Ingredients (For four people):
12 oz. (350g) spaghetti
8 oz. (225 g) beef
4 oz. (110 g chicken livers
3 oz. (85 g) bacon and / or ham
10 tablespoons (125 g) shredded carrot
10 tablespoons (125 g) shredded onions
10 tablespoons (125 g) shredded celery
7 fl oz. (2 dl.) white wine
5 oz. (140 g) tomato paste
1 pt. (5 dl.) broth or water
1 tablespoon butter
Salt (to taste)
Pepper (to taste)
Nutmeg (at will)
How to cook
Cut the bacon and ham in small pieces. Put it in a small saucepan and fry in butter until golden brown.
Add the onion, carrot and celery.
When it is browned, add the raw chopped beef to the pan and turn round and round, so it all browns evenly.
Then add the minced chicken, the tomato puree and then the white wine and cook 2 - 3 minutes.
All are season with salt (taking into account the bacon or ham relative saltiness), pepper and a little grated nutmeg, and then add water or broth.
Put the lid on the pot and let the sauce is stewed slowly for 30-40 minutes.
Serve with prepared spaghetti.
