Turkish eggplant salad

Eggplants are very healthy heart. They are often found in the Mediterranean diet.

Ingredients (for four people):

1 large eggplant

Juice of ½ lemon

2 tablespoons sunflower oil

4 tablespoons yogurt

1 clove garlic

Salt

Pepper

Black olives (to taste)

Parsley for garnish

How to cook


Eggplant bake or grille until it is completely dark. It is fine to use barbecue grills.

Eggplant cool remove the skin. Eggplant mix or mash with a fork, together with the lemon juice, oil, yogurt, garlic, salt and pepper.

Place in the refrigerator until serving.

Garnish with chopped parsley and olives and served with bread.
